✨ Staying the Course (Even in December)


Hey Reader,

We are officially one week post-Thanksgiving… which means if your house looks anything like mine, we’ve gone straight from turkey leftovers to full holiday chaos.

Think:
🎄 Daily Elf on the Shelf moves
🎄 Spirit week outfits in the school newsletter you swear you didn’t see
🎄 Cookie baking
🎄 Shopping
🎄 And doing everything in your power to make the season magical

It’s A LOT.

And because it’s a lot, December tends to become a holding pattern for anything that feels “extra”… like healthy habits, eating well, or keeping a meal prep routine going.

But I want to challenge you—gently—to stay committed to just one healthy habit you’ve built this year.

Not all of them.
Not perfectly.
Just one.

Maybe it’s:
✨ Eating breakfast every day
✨ Hitting your protein minimum
✨ Prepping lunch for the workweek
✨ Keeping water intake consistent

The goal here isn’t perfection—it’s continuity.

This Week’s Semi-Homemade Meal Prep (Holiday Survival Edition)

December is not the month where I’m whipping up gourmet meals from scratch. I’m leaning hard into semi-homemade options to make life easier—and honestly? It’s been a game changer.

Here’s what I prepped this week:

🍳 Breakfast (37g protein!)

I kept it super simple:

  • Prepped hard-boiled eggs
  • Stocked up on 5 Ratio yogurts

Two eggs + one Ratio yogurt = 37g protein right out of the gate.
Fast, filling, and toddler-mom friendly.


🍽️ Lunch

This one is my current hyper-fixation (and yes, I’m dragging it into this week with zero shame):

  • Trader Joe’s Spanish Microwaveable Rice- I split one box into 6 servings (~½ cup each)
  • Sam’s Club Air-Fried Chicken Bites- These go viral every time I post them because they’re THAT good
  • Roasted veggies- Peppers, onions, broccoli
  • Salsa Verde on top- Adds flavor without heavy calories

It’s quick, high-protein, and honestly the perfect “I need lunch in 2 minutes before I hop into a meeting” option.
